It might be a tough pill to swallow for some of her fans, but Ruby Rose is indeed off the market.

These days the 29-year-old Aussie model, actress and androgynous Orange Is the New Black season 3 breakout is the crush of many – and she herself recently confessed to crushing on Taylor Swift and Kristen Stewart. But the actress tells PEOPLE there’s only one real love of her life.

In our exclusive interview, Rose – who proudly identifies as gender fluid – opens up about fiancée Phoebe Dahl (granddaughter of author Roald Dahl) and the big dream wedding they have in the works.

How is wedding planning going?
“When I booked Orange, I thought things were going to change a little bit and I’d be a little more busy, but obviously I underestimated it. I don’t think anyone knew that my character would be taken to so well. We want to find the time to plan the wedding, but now I think it’s going to be, like, next year. Originally it was going to be this year, but I feel like that’s a bit too ambitious.”

Are you enjoying the engagement period?
“As it turns out we love being engaged, and I love the word ‘fiancée.’ It’s actually nice that we do wait that extra year and get to enjoy being engaged before we ball-and-chain it.”

So will the wedding be a big blowout or more intimate?
“I am more intimate and would totally elope with just the two of us and maybe our parents, but her whole family is like a million people! It’s important to them to have a larger-scale wedding. So it’ll be, like, five people from my life and 500 from hers. That’s why we haven’t planned it yet – because her family is so enormous. I just have to get my mom a plane ticket and a couple of friends.”

Any idea what you’ll wear?
“I want to do a tux, like a really nice fitted suit. Givenchy or a Tom Ford.”
