People Editorial Guidelines Published on January 4, 2016 09:35 AM Share Tweet Pin Email Photo: Barcroft Media Eva Longoria says she’s going to throw a “big, fat Mexican wedding” with fiancée Jose Antonio Baston – but for now, she’s in no rush to walk down the aisle. “We haven’t even discussed it,” she told Today‘s Savannah Guthrie on Monday morning of planning their nuptials. “I mean, I’m still in the glow of the engagement, and it was such a surprise … so we’re still absorbing that moment.” Baston, 47, proposed to Longoria, 40, last month during a romantic trip to Dubai, popping the question with a stunning ruby and diamond ring. The couple began dating in 2013. “He’s amazing, he’s gorgeous and really the kindest human being I’ve ever met,” she said of her businessman beau known as “Pepe,” adding with a laugh, “He’s really private, so I never talk about him!” The actress was previously married to basketball player Tony Parker from 2007-10, and she recently told PEOPLE that relationship helped prepare her to find love again after deciding to be single for a while. “I learned to be content on my own,” she said. “I think I needed that to be ready for what I have with Pepe.” Next up for the Desperate Housewives alum?
