Vivian Howard’s Picky-Eater Pleaser Box
Hummus sandwich (see recipe) with chopped cucumbers, carrots and broccoli
Popcorn sprinkled with grated Parmesan Watermelon wedges with lime zest and sea salt
Creamy Hummus Spread
3 (15.5-oz.) cans chickpeas, drained and rinsed
2 garlic cloves
⅓ cup olive oil
¼ cup fresh lemon juice (from 2 lemons)
3 tbsp. tahini
2 tbsp. water
1 tbsp. honey
1 ½ tsp. kosher salt
⅛ tsp. cayenne pepper (optional)
1. Place chickpeas, garlic, oil, lemon juice, tahini, water, honey, salt and, if desired, cayenne in bowl of a food processor. Process until most of the chickpea skins have broken down and mixture is very smooth, about 3 minutes.
Makes: About 3 cups
