Green Goddess Dip
½ cup sour cream
½ cup mayonnaise
½ cup chopped fresh flat-leaf parsley
¼ cup chopped fresh cilantro
2 tbsp. chopped fresh tarragon
2 tbsp. chopped fresh chives
1½ tbsp. fresh lemon juice (from 1 lemon)
½ tsp. kosher salt
½ tsp. black pepper
2 garlic cloves, roughly chopped
1 anchovy fillet (optional)
Combine sour cream, mayonnaise, parsley, cilantro, tarragon, chives, lemon juice, salt, pepper, garlic and, if desired, anchovy fillet in a blender. Process until light green and creamy. Cover and chill in refrigerator, at least 30 minutes.
