MyRecipes Sweet Potato Casserole

Sweet Potato Casserole with Marshmallows and Corn Flakes

Serves 6-8

4½ lbs. sweet potatoes

1 cup sugar

½ cup butter, softened

¼ cup milk

2 large eggs

1 teaspoon vanilla extract

¼ tsp. salt

1¼ cups Corn Flakes or other similar corn cereal, crushed

¼ cup chopped pecans

1 tbsp. brown sugar

1 tbsp. butter, melted

1½ cups miniature marshmallows

1. Preheat oven to 400 degrees.

2. On a large baking sheet, bake sweet potatoes until tender, about 1 hour. Let stand until cool to touch, about 20 minutes, then peel and mash. Reduce oven temperature to 350 degrees.

3. In a large bowl with an electric mixer on medium speed, beat mashed sweet potatoes, sugar and next five ingredients until smooth. Spoon mixture into a greased 11×7″ baking dish.

4. In a small bowl, combine cereal and next 3 ingredients. Sprinkle over casserole in diagonal rows, about 2 inches apart.

5. Bake for 30 minutes. Remove from oven; let stand 10 minutes. Sprinkle marshmallows in alternate rows between cornflake mixture. Bake 10 minutes, then let stand 10 minutes before serving.
