Michael Schlow’s Steak Sandwich
7 oz. boneless sirloin steak ¼ tsp. black pepper
¾ tsp. kosher salt, divided
½ cup hummus
4 multigrain bread slices, lightly toasted
¼ English cucumber, thinly sliced
1. Sprinkle steak with pepper and ½ teaspoon salt. Heat a grill pan over medium-high heat. Grill beef until desired degree of doneness, about 6 minutes per side. Chill beef 10 minutes; cut sirloin into 1/8-inch-thick slices.
2. Spread 2 tablespoons hummus on each toasted bread slice. Divide steak slices evenly between 2 of the bread slices. Top with cucumbers; sprinkle evenly with remaining ¼ teaspoon salt. Cover with remaining 2 bread slices.
