We thought we had the Starbucks Pumpkin Spice Latte all figured out.

Yet the iconic — and deeply polarizing — fall-time beverage is about to reinvent itself: Starbucks is adding real pumpkin to the lattes. That’s right — real, actual pumpkin purée will be added to the lattes, and caramel coloring will be removed. (Don’t quote us on this, but we’re pretty sure this is the first time squash has ever been served in a coffee beverage.)

“We have been trying to keep a lid on some big news for the beloved Pumpkin Spice Latte, but with recipes and ingredients starting to ship to our stores, the buzz is building. What’s the big deal? After hearing from customers and partners about ingredients, we took another look at this beverage …” reads Starbucks’ Monday announcement of the big news.

Debuting this fall, the revamped lattes will include the following ingredients: espresso, milk, pumpkin spice flavored sauce (which now includes pumpkin purée), whipped cream, vanilla syrup and pumpkin spice topping.

Our prediction? By 2020, Pumpkin Spice Lattes will just be pumpkin pie shoved into a cup and topped with espresso. Which actually sounds pretty delicious.
