Spaghetti Carbonara Frittata

Serves 6
8 oz. spaghetti
5 slices thick-cut bacon
8 large eggs, whisked
¾ cup grated Parmesan cheese, divided
3 tbsp. chopped parsley

1. Preheat the oven until 375°. Bring a large pot of salted water to a boil. Add pasta and cook until just al dente, then drain and reserve.

2. In a large oven-safe skillet over medium heat, add bacon and cook until crisp. Remove, chop and reserve. Brush the sides of the skillet with the bacon fat and remove from heat.

3. In a large bowl, whisk together eggs, ½ cup Parmesan, and parsley. Add the spaghetti and cooked bacon, season with salt and lots of coarse black pepper and stir to combine.

4. Pour egg mixture into the skillet and top with remaining ¼ cup Parmesan. Transfer to the oven for 15 minutes, until just cooked through.
