WATCH: Richard Blais Turns an Avocado Into a Dreamy Chocolate Mousse

Now this is a recipe that’ll help us up our fruit intake.

Chef Richard Blais visited the PEOPLE offices to make a chocolate mousse that will “trick your kids into eating avocados,” he says. By masking blended avocados with a few tablespoons of an instant hot chocolate packet, the Top Chef judge creates a dreamy dessert with none of the guilt.

“It’s okay if the avocados are pretty ripe or they’re a little grey,” he says before scooping the fruit into a blender and adding in the chocolate mix. If you’re looking to lighten up the sweet taste, Blais recommends using cocoa powder instead.

Next, Blais adds a bit of agave nectar because he’s “fancy”— but you can easily switch it out with honey. “We’re simply going to blend this up,” he continues. “You can add a little bit more agave nectar or you can add a touch of water if you have to.” The result is a decadent, pudding-like mixture.

“I can tell it smells sweet and delicious from the cocoa powder,” says Blais. “Look at that texture. It’s almost jiggly just like a great, classic French mousse.”

You can either stop right here and serve up a soft scoop of the mousse plain or elevate the flavor even more with a few optional toppings. The television host recommends using salted peanuts, ras el hanout (a North African spice blend similar to nutmeg and cinnamon) and fennel fronds—but freshly peeled orange slices are the surprise finishing touch.

“Chocolate and oranges. It’s just like tomatoes and basil,” he says, “a classic combination.”

Richard Blais’ Chocolate Avocado Mousse

2 ripe avocados
1½ tbsp. agave nectar
2 tbsp. dark cocoa powder

Salted peanuts
Fennel fronds
Orange segments
Pinch of nutmeg and cinnamon

1. Shell and pit the avocado.
2. Puree the avocado flesh in a blender with the remaining ingredients until smooth like chocolate mousse.
3. Top with peanuts, fronds, oranges and spices, if desired.
