These Christmas tree-shaped desserts are a festive twist on the classic combo of red velvet cake with cream cheese frosting. The ice cream cone layer in between adds a delightful crunch, too. Our recipe uses boxed red velvet cake mix for maximum ease, but feel free to make it from scratch if you’re so inclined. If you’re looking for something to distract the kiddos for an hour or so while they’re on winter break, this is it. Just be prepared for the sugar rush that follows. Red Velvet Cake Christmas Trees 1 package red velvet cake mix, baked according to box directionsIce cream conesCream cheese frosting, store-bought or homemade (recipe below)Green food coloringDecorative sprinkles Using a spoon or your hand, crumble the cake into small pieces. Gently pack the crumbled cake into the ice cream cones, pressing together with your hands to adhere. In a bowl, mix frosting with enough food coloring to dye it to the shade of your liking. Using a piping bag fitted with the star tip, pipe the icing around the outside of the cone to replicate Christmas tree branches, leaving about ½-inch at the bottom. Decorate with sprinkles and serve. Cream Cheese Frosting Recipe 2 cups powdered sugar8 oz. softened cream cheese½ stick softened butter In a bowl, add all ingredients and a pinch of salt. Using a hand mixer, beat the mixture until light and fluffy, about 3 minutes.
