Makes 1

1½ oz. cognac

1½ oz. crème de cacao

1½ oz. cream

Grated nutmeg, for garnish

In a cocktail shaker filled with ice, mix cognac, crème de cacao and cream and shake vigorously. Pour into a chilled martini glass; garnish with grated nutmeg.

White Collar

Makes 1

1½ oz. gin

¾ oz. lemon juice

½ oz. crème de cassis

Blackberry, for garnish

Mix gin, lemon juice and crème de cassis in a Champagne flute. Garnish with a blackberry.

The Stock Broker

Makes 1

2 oz. whiskey

¾ oz. sweet vermouth

¼ oz. demerara syrup

Splash absinthe

Angostura bitters

Lemon peel, for garnish

In a cocktail shaker filled with ice, mix first four ingredients and shake vigorously. Pour into a rocks glass filled with ice and top with a few drops bitters. Garnish with a lemon peel.
