PX-41 Blueberry Lemonade
1 cup frozen blueberries
¼ cup sugar
Splash freshly squeezed lemon juice
1 ripe banana, pureed or smashed
6 oz. lemonade
Whipped cream, for garnish
Skewer of banana slices and blueberries, for garnish
1. In a saucepan over low heat, cook blueberries, sugar and lemon juice until reduced by half. The liquid will be very thick, and some berries will hold their shape. (Note: To save time, you can substitute blueberry jam for the reduction.)
2. Pour pureed or smashed banana and lemonade into a glass filled with ice. Layer a dollop of reduced blueberry mixture on top.
3. Optional for adults: Spike with blueberry vodka.
4. Garnish with whipped cream and fruit skewer, if desired.
