Molten Chocolate Pumpkin Cakes Recipe
1 cup chocolate chips
2/3 cup heavy cream, divided
1 15.25-oz. box white cake mix
1 15-oz. can pumpkin puree
Powdered sugar, for dusting
1. Preheat oven to 400°. In a bowl over simmering water, add chocolate chips and ⅓ cup cream. Stir constantly until chocolate is just melted. Let cool slightly and transfer to refrigerator to set up, about 30 minutes.
2. With a hand mixer, beat cake mix, pumpkin and remaining ⅓ cup cream until smooth, about 2 minutes.
3. Grease a standard muffin tin with non-stick spray. Using an ice cream scoop, Divide half of the batter equally amongst 9 of the cups. Spoon the hardened chocolate into the center of each, then top with remaining batter. Bake in the oven until cooked through, 15-17 minutes. Let cool slightly then carefully remove the cakes, invert and dust with powdered sugar.
