Sometimes you have to go to great lengths to satisfy a craving — just ask Mindy Kaling.

On Wednesday, The Mindy Project star posted a picture on Instagram with a caption that tells a classically delicious love story.

She begins: “So on Friday I was lucky enough to have dinner with friends at ABC Kitchen and we had the butternut squash toast.” Mmmhmm, we dig squash too. We’re listening.

“Today at work I couldn’t stop thinking about them so I found the recipe online and after we wrapped I made them.” Thinking about and Googling food while you should be working — yup, still with you, Mindy.

“I seriously never cook and this took three pans and caramelizing onions and mint garnish and a fancy salt that costs more than my life. Then I took off my makeup and had it for dinner. The end! This was a compelling story.”

Indeed it was — and now we’re sufficiently hungry. Luckily, we have the power of Google, too, and were able to find this divine-slash-complicated-sounding recipe from ABC Kitchen‘s chef Jean-Georges on the New York Times site.

Mindy is correct in her description of the recipe process: It does require three pans (one baking sheet and two skillets, to be precise), caramelizing onions, and garnishing with mint (fancy!).

Labor intensive? Possibly, but when you think about the end result bread fried in olive oil until golden and piled with ricotta cheese, caramelized seasonal veggies, and a sprinkling of fresh herb it all seems worth it. Plus, if you’ve never caramelized onions before, it is actually a beautiful, transformative experience.

And as for the fancy salt? The recipe just calls for coarse salt, so how exorbitant you want to be under that guideline is up to you.

Now get to cooking before the laziness takes over and you wake up on the couch in a pile of Chinese takeout containers.
