Cooking Light Mashed Potatoes Recipe

Mashed Potatoes

Serves 10

4 Yukon Gold potatoes, unpeeled and cut into 2-inch cubes

3 tbsp. unsalted butter

½ tsp. salt

¼ tsp. pepper

⅔ cup 2% milk

2 tbsp. chopped chives, for garnish

1. In a medium saucepan, place potatoes and cover with water to 2 inches above potatoes. Bring to a boil, then reduce to a simmer until potatoes are tender, about 25 minutes. Drain pan.

2. Add butter, salt and pepper, mashing with a potato masher until butter melts. Add milk and mash until desired consistency. Garnish with chives, if desired.

In 1 serving (about ½ cup): 115 calories, 4g fat, 110mg sodium, 16.9g carb, 1.1g fiber, 2.8g protein
