Lidia Bastianich’s Chocolate & Walnut Parfaits
The star of Lidia Celebrates America whips up a fast five-ingredient dessert
22/3 cup chilled heavy cream, divided
10 oz. bittersweet chocolate, finely chopped
2 tbsp. amaretto
12 (½-in.-thick) panettone bread slices
1 1/3 cups toasted walnuts, coarsely chopped
1. Heat 2/3 cup heavy cream in a saucepan over medium just until hot, about 5 minutes. (Do not boil.) Place chocolate in a heatproof bowl, and pour hot cream over chopped chocolate. Stir slowly until chocolate is melted. Add amaretto and stir again until smooth.
2. Whip remaining 2 cups heavy cream with an electric mixer on high speed until soft peaks form, about 3 minutes.
3. Cut each panettone slice in half; place 1 piece in each of 8 parfait glasses. Spoon about 2 tablespoons of the chocolate mixture over each piece. Divide about one-third of the whipped cream evenly among parfaits. Sprinkle about 2½ teaspoons toasted walnuts on each serving. Repeat the panettone, chocolate, whipped cream and walnut layers two more times to build parfaits, and serve.
