Jose Andres’ Classic Guacamole Recipe

1 ½ avocados
1 tbsp. minced red onion
1 tbsp. chopped cilantro
Juice of ¼ lime
1 tsp. kosher salt

1. Cut the avocados in half and remove the seeds.
2. Put the salt, onion and cilantro in the molcajete or bowl and grind the vegetables with a spoon until they are a rough paste.
3. Scoop the avocados from their shells and add the molcajete or bowl. Mash the avocados with 2 spoons.
4. Squeeze in the lime juice and fold everything together.
