We all know guac is the ultimate summer necessity, in the same league as rosé and over-the-top pool floats.

And while you could certainly throw all the ingredients together, mash ’em gently and call it a day with no complaints from anyone, we’re making the case for taking it one step further: Grill the ingredients first.

We’re talking all of the ingredients — avocados, tomatoes, onion, jalapeño and limes. The char from the grill concentrates the flavors and caramelizes the sugars in veggies and fruits, taking your dip to the next level.

Oh, and we have but one more request: For the love of all things sacred, please do not over-mix your guac.

Grilled Guacamole
Serves 8
4 avocados, halved and pitted
2 tomatoes, halved
1 small red onion, quartered
1 jalapeño
2 limes, halved
Olive oil, for brushing*

Preheat a grill to medium-high. Brush the tomatoes, onion, and jalapeño with olive oil and grill for 5 minutes. Brush the avocados with olive oil and add to the grill along with limes, cut side down. Grill until everything is nicely charred, about 5 more minutes. Remove everything from the grill and let cool to room temperature. Chop tomatoes, onions and jalapeño and toss into a large bowl. Scoop avocados into bowl and squeeze over the juice of the charred limes. Season with salt and pepper and mash to desired consistency. Serve with tortilla chips.

*Oil, salt and pepper are freebie ingredients.
