After music superstars Adele, Kendrick Lamar and The Weeknd take the stage to perform at this year’s Grammy Awards, they’ll head to the 58th Annual Grammy Celebration – along with nearly 5,000 other guests – to eat a carefully curated menu put together by L.A.’s Patina Catering.
“I aim to create a menu that is sophisticated, hits every note and celebrates the achievements of the artists,” Patina Restaurant Group chef and founder Joachim Splichal tells PEOPLE of his California-themed menu.
The Baja Taco Truck food station will serve up pollo asada and crispy Pacific rock cod street tacos – using 4,000 corn tortillas and 30 gallons of salsa – pepita caesar salad, smoked bacon refried beans and lime-scented Spanish long grain rice.
Inspired by Northern California cuisine, the Napa Wine Country station will include mustard roasted free-range chicken with Chardonnay-mustard jus (1,000 lbs. of chicken will be prepared!), red wine braised short rib grilled cheese with cave-aged gruyere, and red and gold beet salad.
Vegetarians will delight in the food offerings at the Santa Monica Farmers’ Market station: caramelized rainbow cauliflower ‘steaks,’ roasted kabocha squash, roasted Brussels sprouts, winter citrus salad and cavatelli pasta with pumpkin broth. At this station, an incredible 600 lbs. of squash and 600 lbs. of winter citrus will be served.
The Beverly Hills ‘No Gluten Here’ station will serve grilled flat iron steak and agave lime salmon (1,000 lbs. of each!), as well as Yukon potato gratin, little gem wedge salad, and Blue Lake bean salad.
Of course, no meal is complete without dessert, and this year’s Hollywood Grammy-land features blue chocolate popcorn, Pop Rocks shooters, liquid chocolate s’mores, crème puffs dusted with edible glitter and even cotton candy trees.
