The Food Network Star judge makes a ‘breakfast version of a childhood classic’
Giada De Laurentiis’ Silver Dollar Pancake Sandwiches
1 cup all-purpose flour
2 tbsp. granulated sugar
1 tsp. baking soda
½ tsp. table salt
1 large egg, at room temperature
1 cup whole buttermilk, at room temperature
1 tsp. vanilla extract
Vegetable oil cooking spray
½ cup creamy almond butter
¼ cup strawberry jam
Powdered sugar, for dusting
1. Combine flour, sugar, baking soda, salt and egg in a large bowl. Slowly add buttermilk, whisking constantly until smooth. Stir in vanilla extract. Preheat a griddle or a large nonstick skillet on medium high, and lightly grease with cooking spray.
2. Working in batches, use a small scoop or ladle to drop 2 tablespoons of batter per pancake on hot griddle (being careful not to overcrowd). Cook pancakes until golden brown, 1 to 2 minutes per side. Transfer to a baking sheet, and tent with aluminum foil to keep warm.
3. To assemble, spread 1 tablespoon almond butter on each of half of the pancakes. Spoon 1 teaspoon strawberry jam on each of the remaining pancakes. Place pancakes together to form sandwiches. Dust with powdered sugar.

Food Hack! “Cook all the pancakes ahead of time and freeze them,” says De Laurentiis. “In the morning, warm them in a toaster oven and assemble the sandwiches for a great meal on the run.”
