Gaby Dalkin's Grilled Smashed Burgers

1 lb. ground chuck

1/2 Tbsp. garlic powder

1/4 Tbsp. onion powder

3/4 tsp. kosher salt

1/2 tsp. black pepper

4 slices Swiss or cheddar cheese

4 brioche hamburger buns, split

1. Place ground chuck, garlic powder, onion powder, salt and pepper in a large bowl; mix using your hands to combine. Shape mixture evenly into 4 very thin (about 1/2-inch-thick) patties.

2. Preheat a grill or grill pan to medium high (400° to 450°). Place patties on oiled grates; grill, uncovered until charred on bottoms, about 4 minutes. Flip patties; cook until other side is well-charred and a thermometer inserted into thickest portion of meat registers 155°, 2 to 3 minutes.

3. Remove patties from grill; top each with 1 cheese slice. Let stand until cheese melts, about 1 minute.

4. While cheese melts, place buns on grill, cut-side down. Grill, uncovered, until buns are lightly toasted and grill marks appear, about 30 seconds. Remove from grill. Place patties on grilled buns; add your desired toppings (see below for suggestions).
