We Tried It: Floyd Cardoz Teaches Us How to Make His Crab & Avocado Bruschetta

Hosting a holiday party soon? Celebrity chef Floyd Cardoz has a seriously easy hors d’oeuvre idea for you: a make-ahead crab bruschetta that’s bursting with flavor.
Cardoz, who was the culinary director for the food-filled film The Hundred-Foot Journey, which was released on DVD Tuesday, says his creation was inspired by the movie. Watch the video above to see him teaching three PEOPLE staffers how to make it.

“What we’re going to do is make something for the holidays, so you’re going to impress everyone who comes over,” he tells them. The crab mixture is spiced up with a blend of mint, lemon juice and zest, mustard, mayonnaise, horseradish and avocado.
The chef and owner of White Street restaurant in N.Y.C. has a few key tips. First, be sure your avocado isn’t too firm, or the finished dip will lack flavor. He also suggests using a rubber or silicone spatula to help it combine more easily. And if you’re trying to prep before guests arrive, you can make the crab mixture two hours ahead of time—just be sure to toast the bread right before it’s served.
As for his students—they were quite pleased with their efforts. “I can’t believe I made this!” exclaimed one staff member. “I can’t believe you made it either,” joked Cardoz.
