Debi Mazar & Gabriele Corcos’s Super Tuscan Burger
1 lb. ground beef
¼ red onion, finely chopped
1 large egg yolk
1 tbsp. flat leaf parsley, finely chopped
1 tbsp. Pecorino Romano cheese, finely grated
Freshly ground pepper
4 slices provolone cheese
4 burger buns, split
1 avocado, sliced
4 lettuce leaves
1 tomato, sliced
1. Preheat grill to 350° to 400° (medium-high heat). Combine beef and next 4 ingredients in a bowl; shape mixture into 4 patties. Season patties with salt and pepper on both sides.
2. Grill patties, uncovered, for 3 to 4 min- utes on each side (for medium-rare) or to desired doneness, placing cheese slices over patties during last minute of cooking.
3. Transfer patties to a large platter; let rest 5 minutes. Grill buns until lightly toasted. Serve patties on buns with remaining ingredients.
