Danny Seo’s Peach & Berry French Toast Recipe

1 cup plain unsweetened almond milk
3 large eggs
1 tsp. vanilla extract
½ tsp. ground cinnamon
¼ cup maple syrup (grade B), divided
8 (4-in.) square bread slices of your choice
2 small peaches, halved and thinly sliced
1½ cups blueberries
8 fresh figs, halved
2 tbsp. lemon juice
1. Preheat oven to 400°. Whisk together almond milk, eggs, vanilla, cinnamon and 2 tablespoons of the maple syrup in a medium bowl.
2. Line bottom of a greased 8-inch-square baking dish with 4 bread slices. (You may squish them together to fit.) Arrange peaches on bread slices in an even layer. Pour half of the almond milk mixture over peaches. Layer remaining 4 bread slices over peaches. Top evenly with remaining almond milk mixture. Using a spatula, press down to fully saturate bread. Cover with aluminum foil. Bake 20 minutes. Uncover, and bake until set and top is golden brown, about 20 minutes.
3. Meanwhile, combine blueberries, figs, lemon juice and remaining 2 tablespoons maple syrup in a medium saucepan over medium-high heat. Bring to a boil, stirring often. Reduce heat to low, and simmer, stirring occasionally, until fruit breaks down and forms a thick syrup, 15 to 20 minutes. Top servings with fruit compote.

Food Hack: “Fresh ripe peaches can be tricky to find in the winter,” says Seo. “So throw in frozen organic peach slices. They’ll bake up beautifully and taste juicy and summery.”
