Chocolate Mint Truffles

Makes 12 truffles

10–12 medjool dates
1 tbsp. honey or maple syrup
1 tsp. vanilla
⅛ tsp. salt
¼ cup cocoa powder (plus more for dusting)
½ cup loose mint leaves
2 tbsp. coconut oil

1. Blend everything together in a food processor.
2. Shape into twelve balls. I used a small cookie scoop, and since they were sticky used another spoon to help me get the mixture out.
3. Refrigerate for 30 minutes to help set up.
4. Shape into balls, and roll in cocoa powder. Refrigerate again until ready to eat.
