Chicken-Edamame Salad with Sweet Chili Vinaigrette

¼ tsp. fresh ginger, grated
1 tbsp. sweet red chili sauce (such as Mai Ploy)
1 tsp. lime juice
1 tsp. canola oil
½ cup packaged cabbage and carrot cole slaw
1 cup chopped romaine lettuce
½ cup shredded skinless rotisserie chicken breast
¼ cup shelled edamame
1 tbsp. toasted slivered almonds
1 tbsp. torn fresh basil (optional)

1. In a medium bowl, whisk together ginger, chili sauce, lime juice and oil.
2. Add slaw, lettuce, chicken, edamame and almonds, mixing well to combine. Add basil, if desired.

Serves: 1
