Brian Malarkey’s Bacon & Caramelized Onion Cheeseburger

3 tbsp. canola oil, divided
2 yellow onions, thinly sliced
¼ cup brown sugar
1 cup beef broth
¼ cup apple-cider vinegar
½ lb. (80% lean) ground beef
Salt and pepper, to taste
2 slices cheddar cheese
2 brioche buns, split
4 slices cooked applewood smoked bacon

1. In a large skillet, heat 2 tbsp. canola oil over medium heat. When the pan is hot, add the onions and cook, stirring occasionally, until theonions are golden brown and caramelized, about 30 minutes. Add the brown sugar, stir and cook for approximately 5 minutes. Add the beef broth and apple-cider vinegar, and let the liquid reduce until it can coat the back of a spoon (like the consistency of honey), about 10 minutes. Remove from heat and let cool. (Can be stored in an airtight container in the refrigerator for up to a week.)
2. Form the ground beef into 2 patties, thinner at the center than at the edges for even cooking. Season with salt and pepper on both sides, and drizzle with 1 tbsp. oil. Heat a grill or grill pan over medium heat. Add the burgers and cook for 5 to 6 minutes on each side for medium doneness. In the last minute or so, top each burger with a slice of cheese to melt.
3. Toast the brioche buns on the grill. Serve the burgers on the buns with caramelized onions, bacon strips and your favorite toppings.
