Spicy Chocolate Awesome Sauce

3 cups sugar
1½ cups whole milk
2 cinnamon sticks
6 tbsp. unsalted butter
½ cup plus 1 tbsp. unsweetened cocoa powder
1½ tsp. sea salt
1 tsp. chipotle chili powder
½ tsp. cayenne pepper
3 oz. semisweet chocolate
1½ tsp. vanilla extract

1. Combine sugar, milk, cinnamon sticks and butter in a large saucepan, and whisk vigorously over medium heat for 5 minutes or until completely smooth and sugar is dissolved.

2. Add the cocoa powder, salt and next 4 ingredients, and stir until chocolate is melted and incorporated; scraping the sides and bottom of the pan as necessary to avoid burning the chocolate. The sauce will be silky and shiny when ready. Discard cinnamon sticks.

3. Taste and adjust seasoning as desired. Let cool for 10 minutes. Serve over ice cream or store in an airtight container in the fridge for up to 2 weeks.

Makes: 1 qt. for 4 to 6 sundaes
