Justin Smille’s Tuna & Avocado Sandwich

1 ripe avocado
3 tbsp. finely chopped fresh cilantro
2 tbsp. extra-virgin olive oil
2 tbsp. plain yogurt
1 tbsp. fresh lime juice
½ tsp. kosher salt, divided
4 pumpernickel bread slices, lightly toasted
½ cup chopped celery (from 1 stalk)
2 tsp. sesame seeds
1 tsp. rice wine vinegar
½ tsp. sesame oil
1 (6-oz.) can oil-packed tuna, drained
¼ cup alfalfa sprouts

1. Using a fork, mash avocado in a medium bowl. Stir in cilantro, olive oil, yogurt, lime juice and ¼ teaspoon salt. Spread evenly on 1 side of each bread slice.

2. Combine celery, sesame seeds, vinegar, sesame oil and remaining ¼ teaspoon salt in a small bowl. Add tuna; toss gently to combine, keeping tuna pieces intact as much as possible. Top 2 bread slices evenly with tuna mixture and sprouts. Cover with remaining 2 bread slices.
