When Kelsey Preciado of Little Bits Of was craving avocado toast but had run out of bread, the blogger decided to experiment with a sweet potato base instead. When sliced into ¼-inch thick rounds, the vitamin-packed, gluten-free veggie fits perfectly into the slots of a toaster (just like bread). Preciado suggests running the cycle twice to get the “toasts” a little browned. As for toppings, she says, “the options are really endless!”
Almond Butter & Bananas
For a sweet-and-savory afternoon snack, Preciado suggests topping a sweet potato slab with almond butter, sliced bananas and a dusting of cinnamon.
Proof that toasts are perfect anytime of the day: Preciado whipped up a delicious lunchtime option with tuna salad, relish and diced red onion.
Since toast in any form is practically made for avocados, this one’s a no brainer. Grace Chon topped her version with sliced avocado, chili olive oil, red pepper flakes flakes and sea salt.
Soft Boiled Eggs & Sundried Tomatoes
Katie Shields of Honestly Nourished created a “game-changing toast” covered with baby spinach, radish matchsticks, chopped sun-dried tomato, a soft-boiled egg and microgreens. “It will be your new favorite meal to eat anytime of day!” she says.

While it’s a little more labor intensive, Anni Kravi‘s colorful creation with avocado smash, pan-friend tempeh, raw beet slices and cucumber is worth the work.
Strawberries & Tahini
“These were so much fun to make,” says Larice Feuerstein of Feeding your Beauty, who made a trio with peanut butter, bananas, and chopped cashews; sliced strawberries and tahini; and chickpea salad with sliced radishes.
By using the healthy spread, chia seeds and Tajin seasoning (top) for one version, and avocado smash and soft boiled eggs (bottom) on the other, Kristen Betz created snacks that are “all low carb, high protein, high fiber, healthy fats, and most importantly, gluten free.”
