As prominent Scientologists, Leah Remini says she spent plenty of time socializing with Tom Cruise before her high-profile break from the controversial church in 2013. And during that time the actress says she witnessed the star’s “goofy ideas of fun” – as well as his chilling temper.

In her new memoir, Troublemaker: Surviving Hollywood and Scientology, Remini recounts an incident in which she says the Mission Impossible star terrified his assistants when he reprimanded them over cookie dough he could not find.

Remini, now 45, says she and husband Angelo Pagén were hanging out with Cruise and Katie Holmes when Cruise decided he wanted to make cookies.

Apparently relaying this desire to his assistants, Remini says Cruise walked into his kitchen and when he failed to see the prepackaged cookie dough waiting for him on the counter “he instantly got angry.”

She says Tom then exploded at his “flustered” assistants, as she and her husband initially looked on silently as he berated them.

For much more from Remini, including what she says about Tom Cruise, Katie Holmes, Nicole Kidman, and more, pick up the new issue of PEOPLE, on newsstands Friday.

Raising his arms above his head, Remini writes in the book that Cruise sternly told them that “LRH [L. Ron Hubbard] is here,” then lowered his hand to his chin and said, “and Dave [Miscavige, the head of the church] and I are here.” Then, with a hand down to his waist, he said, “And you are here.”

The star’s assistants “had the fear of God in them because they knew what was coming,” she tells PEOPLE in this week’s cover story. “They are probably still in Florida right now because they disgraced him.”

Remini said in the book that she defused the situation by casually pointing out the cookie dough on the counter.

Scientology, meanwhile, responded that “Ms. Remini is cooking up stories to make dough with her book.”
