What can you say to recipes that are healthful, delicious and easy to prepare other than eureka! A brother-sister team who have collaborated on two previous cookbooks, the authors provide an enticing series of main-course vegetable dishes using potatoes and celery more often than roquette (a type of arugula) or Chinese okra. Try the chilled broccoli and brown rice salad with almonds, onions, olive oil and tarragon.
