>Boil 6 cups water. Add 1 cup mint. Steep, covered, for 30 min., strain and discard leaves. Refrigerate. Meanwhile, puree 2 chopped peaches in blender, adding some tea to create puree. Strain through a fine-mesh sieve and chill. Layer 4 cups crushed ice, a sliced peach and ¼ cup mint in 4 glasses, filling halfway. Add puree, then mint tea.
