Forget Oreos. Here is a rich collection of crunchies, crispies, chewies and gooeys—cookie ideas that are both delicious and nutritious. Dieckmann’s dozens of recipes go beyond the usual sugar, flour and butter to include such ingredients as whole grains, dried fruits, high fiber cereals, nonfat dry milk, yogurt and seeds. A chapter on drop cookies introduces sesame oatmeal crisps, peanut butter blossoms and banana date drops. There are instructions for applesauce fudge squares. Or how about refrigerator cookies like rye honey crisps and fruit spritz? Dieckmann, whose previous cookbooks include From Apples to Zucchini: The Frugal Cook’s Guide to an Overstocked Refrigerator and Overflowing Garden, tops her batch of meal spoilers with glazes and frostings (cran-orange and honey among them).
