It is possible to make delicious muffins for breakfast almost while the coffee is perking—in less than 30 minutes. How about three-flour muffins that have whole wheat flour, cornmeal, all-purpose flour, molasses and no butter or shortening. Can you imagine anything healthier? They take only 15 minutes and taste great. The orange-raisin muffin is good enough to be served as cake after dinner. Not all the breads in this book can be whipped up in a few minutes. In one section that includes fancy breads—some take 90 minutes to make—is bourbon rolls with Kentucky ambrosia.
