Chipotle Beef & Bean Chili

TRY THIS HEARTY DISH SERVED AT LACHEY’S BAR, THE BROTHERS’ NEW CINCINNATI SPORTS BAR

2 tbsp. olive oil

3 lbs. ground Angus beef

2 cups diced red bell peppers

2 cups diced green bell peppers

4 cups diced onions

1 can (¼ cup) chipotle in adobo sauce, chopped

¼ cup chopped garlic

¼ cup chili powder

1 tbsp. ground cumin

1 tsp. ground coriander

1 (12-oz.) bottle lager beer

2 (28-oz.) cans diced tomatoes

1 (15-oz.) can black beans, drained and rinsed

1 (15-oz.) can garbanzo beans, drained and rinsed

2 oz. dark chocolate chips

1. In a large stockpot, heat the oil over medium-high heat. Add the ground beef and cook for 8 minutes until browned. Drain off fat and transfer beef to a plate.

2. Return empty pot to the stove. Add the red and green bell peppers and next 6 ingredients; cook over medium-high heat for 8 to 10 minutes, stirring often.

3. Return the meat to the pot. Stir in the lager and next 4 ingredients; simmer over low heat for 2 hours.

4. Ladle into bowls. Serve with your favorite toppings, like sour cream, chopped scallions and shredded cheddar cheese.

Jessica bought you the Seed on the Go food truck in 2014. How did that come about?

Jessica is a loving and generous person, but I was completely blown away when she offered to buy me the truck! She knows how much joy there is for me to make and share food.

Are all your customers vegan?

I find that most aren’t vegan or even vegetarian—they just like the food. Eating vegan doesn’t have to be an absolute choice, just one that you can explore and enjoy.

What’s Jessica’s favorite dish?

She loves the mac ‘n’ cheese [see right]. Both of us enjoy eating healthy, plant-based meals, but sometimes you just want comfort food. This is a win-win!

What makes it a healthier option?

The sweet potato and quinoa pasta create a yummy, creamy texture that is low in fat and high in protein. And don’t get me started on the benefits of a dairy-free diet! I could go on and on.

Smoky Mac ‘n’ Cheese

Per serving: 324 calories, 17g fat, 8g protein, 3g sugar, 3g fiber, 35g carbs

1 sweet potato

8 oz. cremini mushrooms, sliced

2 tbsp. canola oil

½ tsp. liquid smoke

1½ tsp. salt, divided

8 oz. quinoa elbow pasta

¼ cup nondairy butter, softened

¼ tsp. nutmeg

½ tsp. onion powder

1 tbsp. fresh lemon juice

1 cup unsweetened almond milk

1 tbsp. sriracha chili sauce

8 oz. nondairy cheddar cheese, shredded

Chives, for garnish

1. Heat oven to 400°. Pierce sweet potato several times with a fork. Place the sweet potato on a baking sheet lined with foil. Bake until tender, about 45 minutes. Remove skin from sweet potato and set aside.

2. In a mixing bowl toss together mushrooms, oil, liquid smoke and ½ tsp. salt. Place on a foil-lined baking sheet and cook for 10 minutes, stirring once. Remove from oven and set aside.

3. Lower oven to 350°. Cook pasta until al dente, about 8 minutes; reserve ½ cup pasta cooking water. Stir together sweet potato, pasta water, 1 tsp. salt, butter and next 6 ingredients until smooth. Fold in pasta and mushrooms and bake, covered, in a lightly greased 11-x-7-in. baking dish for 30 minutes. Remove from oven and let sit for 5 minutes. Sprinkle with chopped chives and serve.
