BACON-JALAPENO CHEESE BALL
Makes: 12 servings Hands-on time: 30 min. Total time: 1 hr., 30 min.
8 oz. cream cheese, softened
½ cup (2 oz.) shredded cheddar cheese
2 tbsp. chopped fresh cilantro
1 clove garlic, minced
¼ tsp. ground cumin
Pinch ground red pepper
1 tsp. fresh lime juice
½ tsp. Worcestershire sauce
2 jalapeño peppers, stemmed, seeded and diced, divided
6 slices bacon, cooked and crumbled, divided
¼ cup chopped pecans, toasted
1. Stir together cream cheese and next 7 ingredients. Add half the jalapeños, half the bacon and salt to taste. Shape mixture into a ball. Set aside.
2. Combine pecans with remaining jalapeño peppers and bacon in a pie plate. Roll cheese ball in pecan mixture. Cover and chill 1 hour. Serve with crackers.
