Sheldon Simeon’s Crunchy Kale & Cabbage Slaw

1 sweet onion, coarsely chopped
1 tsp. Dijon mustard
½ cup apple cider vinegar
2 tbsp. fresh lemon juice (from 1 lemon)
½ tsp. granulated sugar
½ tsp. kosher salt
2⁄3 cup canola oil
3 cups kale, stems removed, cut into ribbons
1 (2-lb.) head red cabbage, julienned
1 large carrot, julienned
3 oz. radishes, julienned
½ cup dry-roasted peanuts, chopped

1. Combine onion, mustard, vinegar, lemon juice, sugar, salt and oil in a blender; blend until well combined, about 1 minute.

2. Combine kale, cabbage, carrot and radishes in a large bowl. Add dressing and toss. Sprinkle peanuts over the slaw, and serve.

Serves: 10 to 12
