Independence Day is but a few days away, and if you’re looking for a super impressive, patriotic way to cool your guests off, look no further.
These red, white and blue sorbet pops only require four ingredients, plus a star-shaped cookie cutter and some popsicle sticks. Melting coconut oil with white chocolate creates a hardened exterior when chilled for an oh-so-delightful summer treat that’ll get more attention than the fireworks.

Patriotic Sorbet Pops
Spread 3 pints of softened raspberry sorbet on a half sheet tray lined with wax paper and spread in an even layer with a rubber spatula. Top with another layer of wax paper and freeze until fully hardened, at least 4 hours. In a medium bowl over a double boiler or in the microwave, melt 2 cups white chocolate candy melts with 2 tbsp. coconut oil. Let cool to lukewarm but still fluid. Take the sorbet out of the freezer and cut into star shapes using a cookie cutter. Transfer to a separate sheet tray lined with parchment (Note: If they’ve started to soften, put them back in the freezer for a bit.) Place a popsicle stick in the bottom of each star and dip the top half in the white chocolate top with blue sprinkles. Transfer them back to sheet tray lined with parchment and freeze until ready to serve.
