In a perfect world, we’d happily munch on Girl Scout cookies all day long and look like Gigi Hadid in a bikini. Alas, not only is binging on cookies a terrible idea, but you can’t even buy Girl Scout Cookies most of the year. Luckily, I’ve come up with a low-calorie treat inspired by the flavors of those über-popular cookies.
Here’s my fix for a Thin Mints craving — it’s creamy, cool, and has a little kick of protein, thanks to Greek yogurt. This dip has all the appeal of Thin Mints, especially when you eat it with chocolate graham crackers. (Those things are kind of magical.) You can also try it with your favorite fruit. Get creative, and dig in!
FROM COINAGE: Try This Healthy, Cheap Late-Night Snack
Hint of Mint Chocolate Dip
1 cup light whipped topping (like Skinny Truwhip or So Delicious Dairy Free CocoWhip! Light)
½ cup fat-free vanilla Greek yogurt
2 ½ tbsp. unsweetened dark cocoa powder
2 packets no-calorie sweetener (like Truvia)
1 tsp. vanilla extract
3 to 4 drops peppermint extract
2 chocolate graham crackers (½ sheet), finely crushed
Serving suggestions: chocolate graham crackers, strawberries
1. In a medium bowl, combine all ingredients except graham crackers. Mix until smooth and uniform.
2. Top with crushed graham crackers.
