Peanut & Chocolate Shell Cones
1 cup semisweet chocolate chips
2 tbsp. coconut oil
6 sugar ice cream cones
1 qt. vanilla ice cream
¼ cup chopped peanuts
1. Microwave chocolate chips and coconut oil in microwavable bowl on high until melted, about 1 minute, stirring every 20 seconds.
2. Drizzle about 3 tablespoons of melted chocolate inside each cone, and swirl to coat the interior. Turn cone upside down, and dip rim in chocolate. Transfer to a baking sheet, and chill until chocolate is hardened, about 3 minutes.
3. Fill each cone with vanilla ice cream. Spoon remaining chocolate sauce evenly over ice cream, and immediately sprinkle with chopped nuts. Return cones to the freezer, or serve immediately.
