Charlie Palmer’s Grilled Chicken Burgers with Guacamole
2 lbs. ground chicken (or turkey)
1 large egg, room temperature
1 serrano chili, stemmed, seeded and minced
¼ cup minced red bell pepper
2 tbsp. minced shallot
1 tsp. minced garlic
1 tsp. chili powder
¼ tsp. cumin
Freshly ground black pepper
Extra-virgin olive oil
6 large buns, split and toasted
1. In a large bowl, combine the ground chicken and egg, using your hands to blend. Add the serrano, bell pepper, shallot, garlic, chili powder and cumin. Mix well to blend. Season with salt and pepper to taste.
2. Preheat and oil the grill, or preheat a grill pan over medium-high heat. Form the chicken mixture into 6 equal mounds, and shape each into a patty.
3. Brush both sides of each chicken patty with oil. Place the burgers on the grill, and cook for 6 minutes. Turn and grill for another 6 to 8 minutes until cooked through. Place burgers on the toasted buns, top with guacamole, and serve immediately.
