If you’re not a fan of mayo, chicken salad is a menu item that’s usually off-limits — until now.

By swapping it out with a homemade avocado puree, you’re not only making it so much more delicious, but healthier, too. Win-win!

Avocado Chicken Salad Recipe

4 cups shredded chicken (from 1 whole rotisserie chicken)
1 red bell pepper, diced
2 avocados, halved and pitted
2 tbsp. lemon juice
2 tbsp. olive oil
½ tsp. coriander
Pinch of cayenne
Pita bread, for serving

In a food processor, add avocados, lemon juice, olive oil, coriander, and cayenne. Season with salt and pepper. In a bowl, toss chicken with bell pepper and fold in the avocado mixture. Serve on pita bread.
