In the realm of summer Olympics viewing party foods, nachos may not be the first thing that comes to mind. And no offense to burgers and dogs, but they probably should. This recipe feeds a big crowd and comes together in less than 5 minutes — and shows you went the extra mile to put people in the patriotic spirit.
The three cheese blend is a clutch combo: cheddar for bold flavor, pepper jack for some heat, and mozzarella for extra meltiness. If you want to add some extra heartiness without compromising the red, white and blue color scheme, add some diced or shredded chicken breast meat along with the cheeses.
Red, White and Blue Nachos
1 bag blue corn tortilla chips
¾ cup shredded white cheddar
¾ cup shredded pepper jack
¾ cup shredded mozzarella
1 ½ cups store-bought pico de gallo
Spread the chips in an even layer on a large sheet pan. Top with the cheeses and broil on high until melted and bubbly, 3-4 minutes. Top with pico and serve immediately.
