When a football game is underway, you’ll more likely find Erin Andrews working the sidelines than parked at home in front of a flat screen. But on days off, the FOX Sports reporter gets geared up to gather around the TV for a football-filled afternoon with pals. So what does she serve? Wings, of course!
But here’s Andrews’s twist on the game-day staple: no frying is involved, and she likes to serve hers up with a side of brown rice. Filling but also low-calorie enough that you can still tuck in dessert.
Mom’s Chicken Wings
• 2½ lbs. chicken wingettes
• ½ cup white vinegar
• ½ cup brown sugar
• ¾ cup pineapple juice
• 1 tbsp. soy sauce
• ¾ cup ketchup
• 1 tsp. mustard
• 2 cups cooked white or brown rice
1. Broil wings until browned, about 10 minutes per side.
2. Meanwhile, in a large pot, combine vinegar, brown sugar, pineapple juice, soy sauce, ketchup and mustard. Bring to a boil and stir until sugar is dissolved. Add wings and simmer, covered, until wings are tender, about 10 minutes. Serve with rice (optional).
