(Makes about 1¾ cups)

2 tablespoons oil

½ bell pepper, finely chopped

½ onion, finely chopped

1 tablespoon mustard

1 tablespoon Worcestershire sauce

¼ cup brown sugar or ¼ cup maple syrup (more or less to taste)

1½ cups ketchup

¼ cup beer (optional)

Heat oil on medium heat. Add onion and bell pepper and sauté until slightly browned. Add the remaining ingredients and simmer on low heat for about 30 minutes. Serve hot or cold with any type of barbecued meat.
