COBB SALAD FROM MAXWELL’S MARKET IN BATON ROUGE
1 (8-oz.) skinless, boneless chicken breast
1 tsp. olive oil
½ tsp. Paul Prudhomme’s Blackened Redfish Magic seasoning
5 cups chopped Romaine lettuce
¾ cup crumbled blue cheese
4 strips hickory-smoked bacon, cooked
2 hard-boiled eggs, halved
½ avocado, sliced
1 cup chopped vine-ripe tomatoes
½ cup Greek vinaigrette dressing
1. Preheat grill on high. Rub the chicken breast with olive oil and seasoning, then place on the hot grill. Lower heat to medium high and cook, covered, for 10 minutes or until no longer pink in the center, turning once.
2. Remove chicken from grill and let rest for 10 minutes before slicing.
3. Divide lettuce, cheese, bacon, eggs, avocado and tomatoes between two plates. Top with warm chicken slices. Drizzle ¼ cup of the dressing over each salad.

LEFTOVER BREAD AND VEGETABLE FRITTATA
Serves: 6 to 8
8 large eggs
½ tsp. sea salt or kosher salt
Freshly ground black pepper to taste
1 cup stale bread, cut into ½-in. pieces
4 tbsp. extra-virgin olive oil
4 slices bacon, cut into ½-in. pieces (optional)
2 cups raw or 2½ cups cooked leftover vegetables, cut into ½-in. pieces
½ cup chopped scallions
1. Preheat oven to 425. In a bowl, whisk the eggs with the salt and pepper. Add bread pieces and set aside.
2. Pour olive oil into a 12-in. skillet, scatter in the bacon and set over medium heat. When bacon is sizzling, toss in the vegetables. Stir a few times until vegetables are hot. Add scallions, season with salt and stir. Cover the skillet and cook over medium heat, stirring occasionally until the scallions are wilted, about three minutes.
3. Raise the heat and pour in the egg and bread mixture. Cook for a minute or two until a thin crust forms on the bottom of the frittata. Set the pan in the oven for 7 to 8 minutes, until the eggs are cooked.
4. Remove the pan from the oven, and with a rubber spatula, loosen the frittata around the edges and underneath. Cover with a large plate or a wooden board and flip frittata out of the pan. Serve.
